Atlanta, GA – (Highpoint Digest) – On Tuesday (May 07, 2024), Signia by Hilton Atlanta announced the highly anticipated grand opening of Capolinea, its signature Italian-American fine dining restaurant. Helmed by Executive Sous Chef Jeuel Ortiz, Executive Pastry Chef Daniella Lea Rada, Director of Beverage Evan Sewell and Sommelier Marvella Castañeda, the elegant restaurant features delectable handmade pastas, traditional Neapolitan pizzas and decadent desserts, featuring locally-sourced ingredients from regional purveyors. Dishes are complemented by an extensive wine and cocktail program, including prosecco upon arrival and an immersive tableside martini service.

An Italian Homage with Georgia Touches
Chef Jeuel has artfully-crafted a menu celebrating the flavors of Italy that draw inspiration from a bounty of high-quality ingredients from throughout Georgia. Regional purveyors include The Spotted Trotter, Ellijay Mushrooms, and Engelman’s Bakery, among others. Prior to Capolinea’s opening, Chef Jeuel visited farms throughout the state and traveled to several cities in Northern Italy including Bologna, Florence and San Marino, which aided his research in menu and restaurant concept development, helping to position Capolinea as one of the most anticipated restaurant openings in the city.
Guests begin each meal with the restaurant’s signature bread service, featuring house made brioche, Castelvetrano Olive sourdough and a variety of Italian-inspired butters, including Olive Oil and Calabrian Chile made daily. To start, diners can choose from an array of curated charcuterie, freshly prepared salads and antipasti, such as a Halibut Crudo, featuring pickled squash, finger lime, citrus and avocado, or an Italian-American favorite, Beef Carpaccio. Main dishes span nostalgic favorites with a twist, such as Ravioli D’Anatra prepared traditionally, but elevated with kumquat gremolata, or Limone Ricotta Gnudi, with Georgia shrimp, ricotta dumplings, 30-month aged parmesan and dill. Guests can also indulge in a selection of Neapolitan pizzas, made with a live culture flour crust proofed over two days, or heartier dishes, including a Whole Branzino. Local and regional touches are found throughout the menu from Ellijay mushrooms, serving as the base of the Fritto di Funghi, to sweet Georgia honey served alongside the Salumi e Formaggi.

For a sweet ending, Executive Pastry Chef Daniella Lea Rada and her team have created beautifully plated desserts that pay tribute to Italy, including modern versions of the traditional Cannoli, featuring Fior di Latte whipped ganache, Adona cauliflower, Clementine gel, and bergamot sorbet and Prendiamo un caffè?, made with Mascarpone whipped ganache, espresso mousse, dulcetto al amaretto, and 80% gelato al cioccolato. Additionally, no Capolinea meal would be complete without one of these confectionary creations, elevated pastry classics or seasonal, house made gelatos.
Buzzing Beverage Experiences
Complementing the menu, Director of Beverage Evan Sewell and Sommelier Marvella Castañeda have created an unforgettable beverage experience for locals and guests alike. Capolinea’s wine program features approximately 2,000 bottles of wine with a curated selection that begins with Italy, celebrating the rich tapestry of flavors and stories woven by small artisanal winemakers and large-estate benchmark producers. The wine list has been thoughtfully crafted to complement the flavors of Italian cuisine, from the robust reds of Tuscany, perfect for pairing with hearty pasta dishes to the crisp whites of the Friuli, ideal for sipping alongside seafood. Additionally, Capolinea’s collection includes wines from the lush vineyards of France to the sun-kissed valleys of California and beyond.
The true showstopper is Capolinea’s tableside martini service, featuring a sleek trolley with a selection of the coldest martinis in Atlanta. The restaurant uses liquid nitrogen to chill and garnish the glass to -350 degrees to ensure a frosty cocktail every time for this interactive and personal cocktail experience. Highlights include the Gabagool martini, featuring capicola and spicy salami-infused Ketel One Vodka, Fino sherry, and vermouth, garnished with a sundried tomato and ricotta-stuffed olive, as well as the Capolinea martini, featuring olive-oil washed vodka. In addition to martinis, diners can also sip on a selection of aperitivi, including the Creamsicle topped with burrata foam or an array of signature cocktails and spirit-free selections.
Elegant Design
Located on the hotel’s fourth floor, upon arrival to Capolinea, guests are immediately drawn into the hotel’s elegant, intimate dining room, featuring dramatic crown molding and dazzling light fixtures, complemented by stunning views of Atlanta’s skyline. Throughout the naturally lit and bright restaurant, guests can find comfortable spaces, featuring stylish banquettes and booths, offering the perfect place for a date night, celebration, family milestone or business gathering. Capolinea boasts several pieces of local and regional artwork, as part of Signia by Hilton Atlanta’s extensive art collection, curated by Atlanta-based Faulkner+Locke.

Capolinea is one of eight food and beverage experiences centered around both the South and Atlanta regions at Signia by Hilton Atlanta, from Nest on Four to Club Signia. Owned by Georgia World Congress Center Authority, the 976-room property offers direct access to the Georgia World Congress Center via a pedestrian walkway and is located steps from Mercedes-Benz Stadium and State Farm Arena, perfect for sports and entertainment fans.
